I personally undertook numerous attempts – 5 to 6 different variations, in fact – and went through nearly an entire bag of tigernut flour (a popular AIP-friendly flour) in my efforts to adapt this recipe. Regrettably, none yielded the desired results in terms of texture and taste.
This recipe is fundamentally an adaptation of my original paleo and egg-free pancakes, specifically reimagined into a fun, skewer-friendly shape. As a recipe developer, my primary commitment is to provide you with amazing, healing recipes that you won’t believe are grain-free and delicious. I had a very clear vision for the light, fluffy texture and rich flavor I wanted these pancake skewers to have, and I found that this vision simply wasn’t achievable without the unique properties of almond flour and almond milk.
However, that doesn’t mean you’re out of luck if you need a nut-free or AIP option! There are indeed many other excellent AIP and nut-free pancake recipes available (like this one for cassava pancakes, for instance) that could potentially be adapted into the skewer format. The core idea of making mini pancakes and threading them with fruit is transferable. While this recipe specifically includes almonds (an AIP reintroduction), it proudly remains both grain-free and egg-free, offering significant benefits for many dietary needs.
