Essential Ingredients for Gluten-Free Beef Chow Fun

Creating this flavorful stir-fry requires a few key components. Here’s what you’ll need, along with insights into some of the special gluten-free alternatives that make this dish shine.

Fresh ingredients ready for a delicious stir-fry.
  • Flank Steak: The star of the dish! Flank steak is ideal for stir-frying because it cooks quickly and, when sliced thinly against the grain, becomes incredibly tender. You can also use sirloin or skirt steak as alternatives.
  • Rice Noodles: These wide, flat rice noodles (also known as “hor fun”) are what give chow fun its signature chewy texture. Look for fresh or dried wide rice noodles in the Asian section of your grocery store or at an Asian market. I use these specific rice noodles for best results!
  • Fresh Aromatics: Onion, Garlic, and Ginger: These form the aromatic foundation of the stir-fry. Sliced onion provides a sweet and pungent base, minced garlic adds depth, and fresh ginger brings a warming, zesty kick that is essential to Asian cuisine. Green onions are used for garnish and a fresh bite.
  • Bean Sprouts: Mung bean sprouts add a wonderful crisp texture and a hint of freshness to the dish. You can typically find these in the produce section of your grocery store, often near salad mixes. They cook quickly and contribute to the authentic chow fun experience.
  • The Gluten-Free & Soy-Free Sauce Powerhouse:
    • Coconut Aminos: This is a fantastic soy-free and gluten-free alternative to traditional soy sauce. It offers a similar savory, umami flavor with a hint of sweetness. Choose a high-quality brand for the best taste.
    • Rice Vinegar: Adds a touch of tang and brightness to balance the richness of the other sauce ingredients.
    • Fish Sauce: Don’t skip this! A small amount of fish sauce (ensure it’s gluten-free) adds incredible depth and savory umami, mimicking the complexity often found in oyster sauce. It’s a secret weapon for authentic Asian flavors.
    • Coconut Sugar: Provides a natural sweetness to balance the salty and sour notes, standing in for the sweetness found in traditional oyster sauce. Brown sugar can be used as a substitute if needed.
    • Arrowroot Starch: This gluten-free thickener is crucial for achieving the perfect silky consistency in the sauce, allowing it to coat the noodles and beef beautifully. Cornstarch can be used as a substitute.
  • Avocado Oil: A high smoke point oil perfect for stir-frying at high temperatures without burning.
  • Baking Soda: A tiny pinch is used in the beef marinade for a technique called “velveting,” which tenderizes the meat, making it incredibly soft and moist, just like restaurant-style stir-fries.
  • Salt and Pepper: For seasoning the beef and vegetables to taste.

Step One: Prepare the Sauce. In a small bowl, combine all the sauce ingredients and whisk them thoroughly until well mixed. Set this flavorful sauce aside.

Step Two: Marinate the Beef. In a separate bowl, add the thinly sliced flank steak. Toss it with arrowroot starch, a pinch of baking soda, coconut aminos, fish sauce, coconut sugar, and a dash of salt and pepper. Allow it to marinate for at least 10 minutes to tenderize and absorb flavors.

Step Three: Prepare the Noodles. Place the rice noodles in a large, deep bowl. Cover them with very hot water (but not boiling, which can make them mushy) to soften. Stir and separate the noodles gently with tongs every few minutes. Once they are softened but still slightly al dente, drain them thoroughly and set them aside.

Step Four: Cook the Steak. Heat the avocado oil in a wok or a large, deep pan over medium-high heat. Add the marinated steak in batches, if necessary, to avoid overcrowding the pan. Cook each side for 2-3 minutes until beautifully browned and crisp. Remove the cooked steak and set it aside.

Step Five: Sauté the Vegetables. Reduce the heat to medium. Add a little more oil if needed, then add the sliced onion, minced garlic, and large pieces of ginger. Sauté until the onion is translucent and fragrant. Remove and discard the large ginger pieces. Stir in the mung bean sprouts and green onions, cooking for another 3 minutes until they are slightly softened. Season lightly with salt and pepper.

Step Six: Combine and Finish. Return the cooked steak to the pan with the vegetables. Add the softened rice noodles and pour in the prepared sauce. Gently toss and stir all the ingredients together for about 2 minutes, allowing the sauce to thicken and evenly coat the beef and noodles. The sauce should be glossy and clinging to everything.

Step Seven: Serve Immediately. Remove the chow fun from the heat. Taste and adjust seasoning with additional salt and pepper if desired. Serve hot and enjoy your homemade gluten-free beef chow fun!

Expert Tips & Tricks for the Perfect Chow Fun

  • Wok Wisdom: While a large, deep skillet will work, a traditional wok is ideal for stir-frying. Its high sides and rounded bottom allow for even heat distribution and easy tossing, which is crucial for achieving that authentic “wok hei” (breath of the wok) flavor.
  • Don’t Overcrowd the Pan: This is a golden rule for stir-frying! Overcrowding lowers the pan’s temperature, steaming the ingredients instead of searing them. Cook the beef in batches to ensure it browns nicely and develops a crispy exterior.
  • Slice Against the Grain: For incredibly tender beef, always slice your flank steak thinly against the grain. This shortens the muscle fibers, making the meat much easier to chew and more enjoyable.
  • Noodle Perfection: Don’t overcook your rice noodles when soaking. They should be softened but still have a slight chew (al dente). They will finish cooking in the wok. Overcooked noodles will become mushy and break apart.
  • High Heat, Quick Cook: Stir-frying is all about high heat and fast cooking. Have all your ingredients prepped and ready to go before you start cooking. This ensures everything cooks evenly and quickly, retaining its texture and vibrant color.
  • Taste and Adjust: Always taste your sauce and the final dish! Adjust seasonings like coconut aminos (for saltiness), coconut sugar (for sweetness), or a pinch of red pepper flakes for a touch of heat, according to your preference.

Frequently Asked Questions About Gluten-Free Beef Chow Fun

Can you make this recipe grain-free?

While the chewy rice noodles are central to the authentic chow fun experience, you can adapt this recipe to be grain-free. Sweet potato glass noodles or cassava noodles can be good alternatives. Be aware that the mouthfeel and texture will differ from traditional rice noodles, but the rich and savory flavors of the sauce and beef will still be wonderfully delicious!

Can you add other vegetables to beef chow fun?

Traditionally, beef chow fun is made with minimal vegetables like bean sprouts and green onions to highlight the beef and noodles. However, you can absolutely add more vegetables to enhance nutrition and bulk up the dish! Shredded carrots, thinly sliced bell peppers, broccoli florets, or snow peas are excellent additions that stir-fry well. Add harder vegetables earlier in the cooking process.

What is “velveting” and why is baking soda used?

Velveting is a Chinese cooking technique used to tenderize meat and give it a silky texture. A small amount of baking soda combined with starch and liquid creates a protective coating on the meat, preventing it from drying out during high-heat cooking. This results in incredibly tender, restaurant-quality beef that is a hallmark of good stir-fries.

Where can I find wide rice noodles?

Wide flat rice noodles (often labeled “hor fun” or “shahe fen”) are available in most Asian grocery stores. You can find them fresh in the refrigerated section or dried in the noodle aisle. If you can’t find very wide noodles, thinner flat rice noodles or even linguine-shaped rice vermicelli can work in a pinch, though the texture will be slightly different.

Storage and Reheating Instructions

This gluten-free beef chow fun stores wonderfully, making it an excellent option for meal prep. Leftovers can be kept in an airtight container in the refrigerator for up to 3 days. When reheating, I recommend doing so in a pan or wok over medium heat. You may want to add a splash of extra coconut aminos or a tablespoon of water or broth, as the noodles tend to absorb the sauce in the fridge, which can make the dish a bit dry. Stir frequently until heated through, ensuring the noodles regain some of their moisture and the flavors are vibrant once more.

    rice noodles
  • 1 lb
flank steak, sliced thin against the grain
  • 1 tbsp
    arrowroot starch
  • tsp
    baking soda
  • 2 tbsp
    coconut aminos
  • 1 tsp
    fish sauce
  • 2 tsp
    coconut sugar
  • Salt and pepper
  • 2 tbsp
    avocado oil
  • 1
    onion, sliced thin
  • 3 cloves
    garlic, minced
  • 1 small
thumb ginger, sliced into large pieces
  • ¾ cup
    mung bean sprouts
  • 5-6
green onions, sliced into 1″ pieces

Instructions

  1. Using a small bowl, combine the ingredients for the sauce (coconut aminos, rice vinegar, fish sauce, coconut sugar, arrowroot starch) and whisk well. Set aside.
  2. Add the flank steak to a bowl and toss in arrowroot starch, baking soda, 2 tbsp coconut aminos, 1 tsp fish sauce, 2 tsp coconut sugar and a pinch of salt and pepper. Toss well and set aside to marinate for 10 minutes. This step is crucial for tenderizing the beef.
  3. Add the rice noodles to a large, deep bowl and soak them in very hot water to soften. Use tongs to separate and stir every few minutes to ensure even softening. Once softened but still lightly al dente (they should be pliable but not mushy), strain the noodles thoroughly and set aside.

  4. Using a wok or large deep pan, heat the avocado oil over medium-high heat. Add the marinated steak, working in batches if your pan is smaller, to avoid overcrowding. Cook for 2-3 minutes on each side or until crisp and browned. Repeat until all of the steak is cooked, then set it aside.
  5. Reduce the heat to medium and add a bit more oil to the pan if needed. Add the sliced onion, minced garlic, and large pieces of ginger. Sauté until the onion is translucent and fragrant. Remove the large ginger pieces from the pan. Add the mung bean sprouts and green onion to the pan and sauté for about 3 minutes or until soft. Lightly season with salt and pepper.
  6. Add the cooked steak, softened noodles, and the prepared sauce to the pan. Lightly stir to allow the sauce to thicken and beautifully coat the stir-fry ingredients for about 2 minutes. Continue tossing until everything is well combined and heated through.
  7. Remove from the heat and season further to taste with additional salt, pepper, or a dash of coconut aminos if desired. Serve immediately and enjoy!

Notes

When soaking the rice noodles, if they don’t soften enough, you may need to carefully drain the water and add fresh hot water to allow them to soften further. Avoid boiling the noodles directly in a pot, as this can make them mushy and prone to breaking during stir-frying. The goal is pliable but firm noodles.
