Essential Ingredients for Your Heavenly Caramel Apple Pudding

Creating this extraordinary dairy-free caramel apple vanilla pudding relies on a few key ingredients that work in harmony to deliver its signature taste and texture. Each component plays a vital role:

  • Coconut Cream and Full-Fat Coconut Milk: These are the stars of our dairy-free pudding base. For the creamiest result, I highly recommend using a high-quality canned coconut cream, such as Native Forest, and ensuring your coconut milk is full-fat. The fat content is crucial for achieving that rich, unctuous mouthfeel that mimics traditional dairy puddings. If using regular full-fat coconut milk, chill it overnight and scoop out the thick cream that separates at the top. This provides the ideal base for an incredibly smooth and luxurious pudding.
  • Arrowroot Starch: This natural, grain-free thickener is essential for giving the pudding its desired firm, yet tender, consistency. Unlike cornstarch, arrowroot provides a glossy finish and holds up well when chilled. It helps to set the pudding beautifully without any gritty texture.
  • Egg Yolks: These are the secret to the pudding’s unparalleled richness, thickness, and creamy texture. Egg yolks emulsify the mixture, add a beautiful golden hue, and contribute to a more decadent flavor profile. They are truly indispensable for achieving the perfect pudding consistency, which took multiple attempts to perfect! (Please see recipe notes for AIP-friendly alternatives if you cannot consume egg yolks.)
  • Coconut Sugar and Maple Syrup: We opt for these natural sweeteners to provide a depth of flavor and sweetness without relying on refined sugars. Coconut sugar offers a subtle caramel-like note, complementing the overall theme, while maple syrup adds a rich, distinctive sweetness that pairs wonderfully with apples and vanilla.
  • Apples: For the sautéed topping, I find Honeycrisp apples to be the ideal choice. Their natural sweetness, firm texture, and slight tartness hold up beautifully when cooked, providing a pleasant contrast to the soft pudding. Other crisp apple varieties like Fuji or Gala would also work well.
  • Cinnamon, Vanilla Extract, and Ghee: These ingredients elevate the flavor profile. Cinnamon infuses the apples with a warm, aromatic spice that evokes autumn. Pure vanilla extract is crucial for the pudding’s classic, comforting flavor. Ghee (clarified butter) is used to sauté the apples, lending a rich, buttery taste while remaining dairy-free. If you are strictly vegan or avoiding ghee, coconut oil makes an excellent substitute.

Step-by-Step Guide: Crafting the Perfect Dairy-Free Caramel Apple Pudding

Creating this exquisite dessert is a rewarding process, broken down into manageable steps for a flawless result. Follow these instructions carefully to bring your dairy-free caramel apple vanilla pudding to life:

  • Mastering the Silky Pudding Base: Begin by combining the rich coconut cream, full-fat coconut milk, and arrowroot starch in a medium-sized pot. Whisk these ingredients together thoroughly until smooth and no lumps remain. Place the pot over medium heat and bring the mixture to a gentle simmer, stirring continuously for 2-3 minutes until it starts to thicken slightly. Meanwhile, in a separate small bowl, lightly whisk your egg yolks. To temper the eggs and prevent them from scrambling, slowly ladle a small amount (about ¼ cup) of the hot coconut cream mixture into the egg yolks, whisking vigorously. Repeat this step once or twice more, gradually bringing the egg yolks up to temperature. Now, reduce the heat of the main pudding mixture to a low simmer. Slowly pour the tempered egg yolk mixture into the pot, whisking constantly to ensure it fully incorporates. Continue to simmer and stir for another 6-8 minutes. During this time, the pudding will thicken significantly. Once thickened, set a fine-mesh strainer over a clean bowl. Pour the pudding through the strainer to catch any small lumps or solids, resulting in an impeccably smooth and velvety texture. Stir in the vanilla extract until well combined. Divide the pudding evenly into three small ramekins or elegant pudding cups. Transfer these to the refrigerator and allow them to set completely, ideally overnight, for the best thick pudding consistency. This chilling period is crucial for flavor development and texture.
  • Crafting the Golden Caramel Sauce: In a separate medium saucepan, combine the coconut milk, coconut sugar, and a pinch of salt. Whisk these ingredients together until the sugar begins to dissolve. Place the saucepan over medium-low heat and bring the mixture to a medium simmer. This step requires patience and frequent stirring. Continue to cook, stirring often, for approximately 20-30 minutes. The mixture will gradually darken in color and thicken into a rich, luscious caramel sauce. Keep an eye on it to prevent burning. Once it reaches a thick, syrupy caramel consistency, remove it from the heat and set it aside to cool slightly. The caramel will continue to thicken as it cools.
  • Preparing the Aromatic Apples: First, peel and cube your large Honeycrisp apple into bite-sized pieces. In a small bowl, toss the apple cubes with ground cinnamon and coconut sugar until they are evenly coated. Melt the ghee (or coconut oil, for a strictly vegan option) in a small pan over medium-low heat. Add the coated apples to the pan and sauté them for 3-5 minutes, stirring occasionally, until they become tender-crisp and lightly caramelized. You want them soft enough to bite into but still retaining a little texture. Remove from heat and set aside.
  • Assembling Your Dessert Masterpiece: Once the pudding has fully set in the refrigerator, carefully remove the cups. Spoon a generous layer of the warm, sautéed apples over the top of each pudding. Finish by drizzling a lavish amount of the homemade dairy-free caramel sauce over the apples and pudding. Serve immediately and savor every spoonful of this incredible fall dessert!

Frequently Asked Questions About This Pudding

Here are some common questions about making and enjoying this dairy-free caramel apple vanilla pudding:

Can I make this recipe without the egg yolks?

While I understand the desire to make swaps, egg yolks are actually a fundamental ingredient in this specific pudding recipe. They contribute significantly to the pudding’s luxurious richness and its perfectly thick, creamy consistency. After extensive testing (about 6 tries!), I found that without the egg yolks, the pudding simply doesn’t achieve the same desirable texture and depth of flavor. If you must avoid eggs, please consider the alternative suggestion below.

What if I cannot eat egg yolks or need an AIP swap?

If you have an egg intolerance or are strictly following an Autoimmune Protocol (AIP) diet, the best suggestion for an egg-free, AIP-compliant version would be to use a base of thick, full-fat coconut yogurt. Instead of making a cooked pudding, layer creamy coconut yogurt with the sautéed cinnamon apples and a drizzle of the dairy-free caramel. This creates a delicious, refreshing, and entirely egg-free and AIP-friendly parfait-style dessert that still captures the essence of this recipe.

Can I make this recipe ahead of time?

Absolutely! This recipe is wonderful for meal prepping or entertaining, as you can prepare all the components in advance. The pudding needs ample time to set, so making it the day before is ideal. The caramel can also be made ahead and stored in an airtight container in the refrigerator. The sautéed apples can be prepared a day in advance and stored separately. When you’re ready to serve, simply rewarm the caramel gently on the stovetop or in the microwave for a smoother drizzle, and then assemble your pudding cups with the apples and caramel. This allows for fresh assembly with minimal fuss right before serving.

How long does the pudding last in the fridge?

Once assembled, the dairy-free caramel apple vanilla pudding will keep well in an airtight container in the refrigerator for up to 3-4 days. For optimal texture and flavor, it’s best consumed within the first 2-3 days.

Can I use other types of apples?

While Honeycrisp apples are recommended for their ideal balance of sweetness and tartness that holds up well when cooked, you can certainly experiment with other firm apple varieties. Fuji, Gala, or Granny Smith (if you prefer a tarter profile) would also work beautifully. Just be mindful that cooking times might vary slightly depending on the apple variety’s firmness.

Are there any other topping suggestions?

Beyond the delicious sautéed apples and caramel, you can certainly get creative with additional toppings! Consider a sprinkle of toasted shredded coconut, a handful of chopped pecans or walnuts (if not AIP), a dollop of dairy-free whipped cream, or even a dusting of extra cinnamon for an extra touch of warmth.

  • ¼ cup maple syrup
  • 1 tbsp & 1 tsp arrowroot starch
  • 2 egg yolks
  • 1 tsp vanilla extract

For the caramel

  • ¾ cup coconut milk
  • ¼ cup coconut sugar
  • Pinch of salt

  • ½ tsp cinnamon
  • 1 tsp coconut sugar
  • 1 tbsp ghee, sub coconut oil

Instructions

To make the pudding

  • Combine the coconut cream, milk, and arrowroot starch in a pot and whisk well to combine. Place on the stove and bring to a medium simmer for 2-3 minutes.
  • To temper the eggs, add the egg yolks to a small bowl. Fill a ladle with the hot coconut cream mixture and slowly stream over the eggs while whisking.
  • Reduce the heat of the pudding to a lower simmer and pour in the egg mixture. Stir to combine and simmer for another 6-8 minutes to allow to thicken.
  • Set a fine mesh strainer over a bowl and strain the pudding through the strainer into the bowl, to remove any solids in the pudding.
  • Add the vanilla to the pudding and stir to combine. Pour the pudding into three small ramekins or pudding cups of your choice. Transfer to the fridge and allow to set (preferably overnight) until it’s a thick pudding consistency.

For the caramel

  • Combine the coconut milk, coconut sugar and salt in a medium saucepan and whisk well. Set over medium-low heat and allow to come to a medium simmer, stirring often for about 20-30 minutes or until thick caramel forms. Set aside.

For the apples

  • Toss the apple with the cinnamon and coconut sugar until well coated.
  • Heat the ghee over medium-low heat in a small pan until melted. Add the apples and stir for 3-5 minutes or until soft. Set aside.

To assemble

  • Remove the pudding cups from the fridge. Top each cup with some apples and a drizzle of caramel. Serve fresh!

Notes

If you can’t tolerate eggs, my best suggestion is to use coconut yogurt as your base and top it with apple and caramel. Still delicious, egg free, and AIP!
