Key Ingredients for Your Funfetti Cookie Pizza
Creating an allergen-friendly dessert that doesn’t sacrifice flavor or texture requires careful selection of ingredients. Our Funfetti Cookie Pizza relies on a thoughtful combination of natural, wholesome components to achieve its irresistible taste and satisfying consistency. Here’s a closer look at what you’ll need for both the delightful cookie crust and the luscious frosting:
For the Cookie Crust: Building the Perfect Foundation
- Tapioca Starch: This fine, starchy flour derived from the cassava root is crucial for achieving the tender, slightly chewy texture of our cookie crust. It helps bind the ingredients together and gives the cookie a pleasant chewiness that is characteristic of traditional cookies, without any gluten.
- Tigernut Flour: Despite its name, tigernut flour is not made from nuts but from small root vegetables, making it a safe choice for those with nut allergies. It offers a subtly sweet, slightly earthy flavor and contributes to the soft, cake-like consistency of the crust, making it truly grain-free.
- Gelatin: A powerful binder and emulsifier, gelatin helps create structure and elasticity in the cookie dough. It’s essential for holding the grain-free flours together, ensuring the cookie pizza holds its shape beautifully while remaining tender.
- Baking Soda: This leavening agent provides a slight lift to the cookie crust, contributing to its soft and fluffy texture, making sure it’s not too dense.
- Maple Syrup: Our natural sweetener of choice, maple syrup adds a lovely depth of flavor and moisture to the cookie crust, perfectly balancing the other ingredients without refined sugars.
- Palm Shortening: A dairy-free fat that provides richness and helps create a wonderfully tender and crumbly texture. Ensure you choose sustainably sourced palm shortening.
- Vanilla Extract: A staple in most baked goods, vanilla extract enhances all the other flavors, adding a warm, aromatic note to the funfetti crust.
- Sprinkles: The heart of “funfetti”! Use high-quality, naturally colored sprinkles to keep this recipe free from artificial dyes. (See our recommendations below!)
For the Frosting & Topping: The Creamy Crown
- Palm Shortening: Again, palm shortening forms the base of our dairy-free frosting, providing the necessary fat for a smooth, spreadable consistency that holds its shape.
- Coconut Cream: The thick, rich part of canned coconut milk (chilled), coconut cream adds a subtle creaminess and helps achieve that luxurious, velvety texture in our frosting, replacing traditional heavy cream or butter.
- Light-Colored Honey: For natural sweetness in the frosting, light-colored honey is perfect. Its mild flavor won’t overpower the other ingredients, contributing just the right amount of sweetness.
- Extra Sprinkles: Because you can never have too many sprinkles on a funfetti dessert! These are for a final flourish, adding visual appeal and a delightful crunch.
How To Make Your Gluten-Free Funfetti Cookie Pizza: A Step-by-Step Guide
Crafting this vibrant Funfetti Cookie Pizza is a joyous process, combining simple steps with incredible results. Follow these detailed instructions to create a show-stopping dessert that’s free from gluten, dairy, and grains.
Step 1: Prepare Your Workspace and Oven
- Begin by preheating your oven to 350°F (175°C). This ensures your oven is at the perfect temperature for even baking as soon as your dough is ready.
- Next, prepare a baking sheet. Line it with parchment paper, then lightly grease the parchment paper with a touch of coconut oil. This prevents sticking and makes for easy removal of your baked cookie crust.
Step 2: Craft the Cookie Crust Dough
- In a large mixing bowl, combine all your dry ingredients for the cookie crust: tapioca starch, tigernut flour, gelatin, and baking soda. Whisk them together thoroughly to ensure they are well combined and evenly distributed.
- In a separate, medium-sized bowl, cream together the palm shortening and maple syrup until they are smooth and well integrated. This forms the wet base for your cookie dough.
- Add the wet mixture (palm shortening and maple syrup) into the bowl with your dry flour mixture. Stir gently until just combined.
- Now, incorporate the vanilla extract and, most importantly, the sprinkles! Fold them in carefully until all ingredients are fully combined and a cohesive, colorful dough forms. Be careful not to overmix, as this can affect the texture.
Step 3: Shape and Bake the Cookie Crust
- Transfer the prepared cookie dough onto the center of the greased parchment paper on your baking sheet.
- Using your hands or a spatula, gently form the dough into an 8-inch round crust. Aim for an even thickness across the entire circle to ensure uniform baking.
- Place the baking sheet into your preheated oven and bake for 12-13 minutes. Keep an eye on it; you’re looking for the edges to be lightly golden brown, indicating it’s perfectly cooked through.
- Once baked, carefully remove the cookie crust from the oven. It’s crucial to let it cool completely on the baking sheet before attempting to handle or frost it. Cooling ensures it firms up and prevents it from breaking.
Step 4: Prepare the Frosting and Serve
- While the cookie crust cools, prepare your delicious, dairy-free frosting. In a clean bowl, combine the palm shortening, coconut cream, and light-colored honey.
- Mix these ingredients well with a spoon or an electric mixer until the frosting is smooth, creamy, and has a consistent texture.
- Once the cookie crust is completely cool, use a spoon or a rubber spatula to carefully spread the frosting evenly over the entire surface of the cookie. Be gentle to avoid damaging the crust.
- Generously top your frosted cookie pizza with a vibrant scattering of additional sprinkles. This adds that essential funfetti flair and an extra layer of texture.
- Finally, using a pizza roller or a sharp knife, very carefully slice the cookie pizza into wedges, just like a traditional pizza. Serve immediately and enjoy the delightful flavors and textures of your homemade, allergen-friendly Funfetti Cookie Pizza!

Frequently Asked Questions About Funfetti Cookie Pizza
Here are answers to some common questions you might have about making and enjoying this delightful gluten-free funfetti cookie pizza:
What Sprinkles Should You Use for an Allergen-Friendly Option?
The choice of sprinkles is key to keeping this recipe truly allergen-friendly and vibrant! Many conventional sprinkles contain artificial colors, hydrogenated oils, and sometimes even wheat-based ingredients, which might not align with a gluten-free or natural diet.
I absolutely love these sprinkles for their natural vibrant colors! I often find them at health food stores like Natural Grocers, but they are becoming more widely available online and in specialty grocery stores. What makes them stand out is that their colors are derived from real ingredients like curcumin (from turmeric), red cabbage, and beet, ensuring you’re adding color without synthetic additives.
These sprinkles are another fantastic option that meets the same high standards for natural ingredients and vibrant hues. Always check the ingredient label carefully to ensure your chosen sprinkles align with all your dietary needs.
Can You Make This Recipe Ahead of Time? How Do You Store It?
Absolutely! This Funfetti Cookie Pizza is a fantastic make-ahead dessert, which makes it perfect for parties or busy weeks. You can prepare the entire cookie pizza, frost it, and then store it.
I recommend slicing it into individual wedges first, then arranging them in an airtight glass container. Stored in the refrigerator, it will stay fresh and delicious for 3-4 days. The flavors often meld beautifully after a day, making it even better!
While I haven’t personally tried freezing a fully frosted cookie pizza, based on the ingredients, it would likely freeze quite well. If you choose to freeze it, I’d suggest freezing individual slices on a baking sheet until solid, then transferring them to a freezer-safe bag or container to prevent sticking. Thaw in the refrigerator before serving.
Can You Use a Shortcut for the Frosting?
Yes, you certainly can! While our homemade frosting recipe is wonderful and specifically designed to be dairy-free and naturally sweetened, there are excellent shortcuts available if you’re short on time or prefer a pre-made option.
I highly recommend using Simple Mills Vanilla Frosting. It’s a fantastic dairy-free and gluten-free option that’s made with wholesome ingredients, including coconut oil and organic powdered sugar. It has a lovely texture and a delicious vanilla flavor that complements the funfetti cookie pizza beautifully. Using a pre-made frosting can save you a significant amount of time, making this dessert even quicker to assemble.

Tips for Success & Variations
Achieving the perfect Funfetti Cookie Pizza is easy with a few extra tips and tricks. Plus, don’t be afraid to experiment with variations to make this recipe truly your own!
- Measure Accurately: Especially with gluten-free and grain-free baking, precise measurements are crucial. Use a kitchen scale for flours if possible, or ensure you’re leveling your measuring cups correctly.
- Don’t Overbake: The cookie crust should be just lightly golden brown at the edges. Overbaking can lead to a dry or crumbly texture. It will firm up considerably as it cools.
- Cool Completely: Patience is key! Resist the urge to frost the cookie while it’s still warm. A warm crust will melt the frosting, creating a messy result.
- Adjust Sweetness: Feel free to slightly adjust the amount of maple syrup in the crust or honey in the frosting to suit your personal sweetness preference.
- Flavor Variations:
- Citrus Zest: Add a teaspoon of lemon or orange zest to the cookie dough for a bright, refreshing twist.
- Almond Extract: Replace half of the vanilla extract with almond extract for a marzipan-like flavor profile.
- Chocolate Chips: If not strictly AIP/Paleo, a handful of dairy-free chocolate chips can be folded into the dough alongside the sprinkles for a double-chocolate funfetti experience.
- AIP Adaptation: To make this recipe strictly AIP (Autoimmune Protocol) compliant, simply omit the sprinkles, as many contain cane sugar or other non-AIP ingredients. The base cookie and frosting will still be delicious!
Serving and Storage Suggestions
Once your Funfetti Cookie Pizza is ready, serving and storing it properly will ensure maximum enjoyment!
- Best Served Chilled: While delicious at room temperature, the frosting sets beautifully when chilled, making for cleaner slices and a firmer texture. Pop it in the fridge for at least 30 minutes before serving.
- Presentation: Arrange slices on a pretty platter, perhaps with some fresh berries on the side (if desired and compatible with your diet) for an extra pop of color and freshness.
- Portion Control: Since it’s a rich dessert, remember that a little goes a long way. The 8 servings suggested are generous!
- Short-Term Storage: As mentioned above, store any leftovers in an airtight container in the refrigerator for up to 3-4 days.
- Freezing for Later: For longer storage, freeze individual slices wrapped tightly in plastic wrap and then placed in a freezer-safe bag for up to 1 month. Thaw in the refrigerator for several hours or overnight before enjoying.
You’ll also love these other allergen-friendly treats:
- S’mores Pizza: A nostalgic twist on a campfire classic, in pizza form!
