While tapioca starch is preferred for its specific textural contributions, arrowroot starch can be used as a direct substitute if necessary. However, I advise against omitting starch altogether, as it plays a critical role in the structural integrity of the bars.

It helps to create a cohesive texture that mimics the effect of an egg. I highly recommend this brand of gelatin, though Great Lakes gelatin is another reputable option. If you tolerate eggs and prefer to use one, you can easily swap out the gelatin egg for a single regular egg. This flexibility ensures that the recipe remains accessible to a wider range of dietary needs.

Bacon: The Savory Garnish and Flavor Enhancer

Bacon, glorious bacon! In this recipe, bacon primarily functions as a savory garnish that elevates the overall flavor profile of the bars. Its salty, smoky notes beautifully complement the sweetness of the sweet potato and the subtle spice of cinnamon. Is it optional? Absolutely! The bars will still be delicious without it. However, I wholeheartedly recommend including it, as the addition of crispy, chopped bacon truly enhances the depth and complexity of the flavor, transforming a simple bar into something truly extraordinary.   • 1 cup sweet potato, baked and mashed
  • ¾ cup coconut flour
  • ¼ cup tapioca starch
  • 4 tbsp collagen peptides
  • 3 tbsp coconut oil + 1 tsp for greasing the pan
  • ¼ tsp baking soda
  • 1 tsp sea salt
  • 1 tsp cinnamon
  • 3 pieces of cooked bacon, chopped cooked – Optional
  • FOR THE GELATIN EGG, sub 1 regular egg if tolerated
  • 1 tbsp gelatin
  • cup water

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8×6-inch baking dish (or a similar size) by lining it with parchment paper. Lightly grease the parchment paper with 1 teaspoon of coconut oil to ensure the bars don’t stick.
  2. In a large mixing bowl, combine the coconut flour, mashed sweet potato, tapioca starch, and collagen peptides. Stir thoroughly until all the ingredients are evenly incorporated, forming a crumbly mixture.
  3. Next, add the remaining 3 tablespoons of coconut oil (melted), baking soda, cinnamon, and sea salt to the sweet potato mixture. Mix well until a thick dough forms. The dough will be quite dense.
  4. To prepare the gelatin egg (this is your egg substitute; if you tolerate eggs, you can use 1 regular egg instead): Pour ⅓ cup of water into a small saucepan. Slowly sprinkle the 1 tablespoon of gelatin powder over the water. Whisk gently if needed to prevent clumps. Allow the mixture to “bloom” or gel for 2-3 minutes.
  5. Place the saucepan on the stove over low heat. Gently melt the gelatin mixture, stirring constantly. This process should only take a few minutes until the gelatin is fully dissolved and clear. Be careful not to boil it. Remove from heat immediately once melted.
  6. Once removed from the heat, vigorously whisk the melted gelatin mixture until it becomes frothy and slightly thickened. This step is crucial for achieving an egg-like consistency.
  7. Immediately add the frothy gelatin egg to the sweet potato mixture in the mixing bowl. Mix quickly and thoroughly until all ingredients are well combined. The dough will become slightly more pliable.
  8. Transfer the dough into the prepared baking pan. Using the back of a spoon or your hands, press and flatten the dough evenly across the bottom of the pan. Ensure it’s tightly packed for uniform bars.
  9. Bake in the preheated oven for 30 minutes, or until the edges are lightly golden and the bars are set.
  10. Remove the baking dish from the oven and allow the bars to cool completely in the pan for 10-15 minutes before handling. This cooling period is essential for them to firm up.
  11. Once cooled, carefully lift the parchment paper to remove the entire block of bars from the pan. Slice evenly into 9 squares. For an extra touch of flavor and crunch, top each bar with the chopped cooked bacon.
  12. Serve these delicious bars immediately for the best experience. They can also be stored in an airtight container in the refrigerator for 2-3 days. To reheat, warm them gently in the oven or under the broiler for a few minutes until heated through and slightly crispy.
