Ingredients

  • 1.5 cups carrots, shredded

  • 1 medium apple, diced
  • 1 cucumber, diced
  • 2 tbsp dried cranberries, I recommend these
  • ¼ cup olive oil
  • Juice of one lemon

Instructions

  1. Combine all of the shredded carrots, beets, diced apple, diced cucumber, and dried cranberries in a large mixing bowl. Toss gently to combine all ingredients evenly.
  2. In a separate small bowl, prepare the simple dressing by whisking together the olive oil and fresh lemon juice until well combined.
  3. Pour the prepared dressing over the vegetable and fruit slaw. Mix thoroughly to ensure every ingredient is evenly coated with the zesty dressing.
  4. For best flavor and to allow the ingredients to meld, chill the detox carrot slaw in the refrigerator for 15-25 minutes before serving. Serve chilled and enjoy this refreshing, nutrient-packed side dish!
