What is Zuppa Toscana?

Zuppa Toscana, directly translating to “Tuscan Soup,” is a hearty and flavorful Italian soup traditionally hailing from the Tuscany region of Italy. While its authentic form often includes cannellini beans, kale or Swiss chard, and a rich vegetable broth, the version many Americans recognize, particularly from popular restaurant chains like Olive Garden, has evolved into a creamy, savory delight featuring Italian sausage, tender potatoes, and fresh kale, often garnished with crispy bacon.

Our Instant Pot Zuppa Toscana recipe draws inspiration from these beloved characteristics, offering a robust and creamy soup that’s both deeply satisfying and incredibly easy to prepare. It captures the essence of comfort food with its savory meat, earthy greens, and tender potatoes all bathed in a luscious broth. This rendition provides a perfect balance of flavors and textures, making it a homemade classic that rivals any restaurant version, but with the added benefit of being customizable and quick.

Why You’ll Love This Instant Pot Zuppa Toscana

There’s nothing quite like a warm, comforting bowl of soup, especially when it’s infused with rich Italian flavors. Italian cuisine offers a special kind of comfort, whether it’s a classic Italian Wedding Soup or a hearty Gnocchi Chicken Soup. Zuppa Toscana stands out as another one of these cozy, timeless classics, perfect for those chilly evenings when you crave something wholesome and flavorful.

Often, the biggest challenge with preparing comforting meals is the time commitment. This Instant Pot Zuppa Toscana recipe eliminates that hurdle, offering the best of both worlds: indulgent comfort combined with incredible speed and convenience. Here’s precisely why this recipe will become a staple in your kitchen:

  • Quick and Effortless Preparation: Using the Instant Pot transforms this traditionally longer-cooking soup into a quick, mostly hands-off affair. The pressure cooker significantly reduces cooking time, allowing you to enjoy a gourmet-quality meal even on the busiest days.
  • Remarkable Flexibility: While optimized for the Instant Pot, this recipe is incredibly adaptable and can easily be prepared on the stovetop. This flexibility means you can enjoy this delicious soup no matter what kitchen equipment you have, though the stovetop version will require a bit more attention and simmering time.
  • Dairy-Free and Dietary-Friendly: We’ve thoughtfully crafted this recipe with a brilliant dairy-free swap for heavy cream, ensuring that those with dairy sensitivities or following a paleo diet can enjoy its rich, creamy texture without compromise. The use of white sweet potatoes also makes it a great option for those avoiding nightshades, without sacrificing flavor or substance.
  • Packed with Flavor: Each spoonful is bursting with robust flavors from the Italian sausage and bacon, complemented by aromatic onions and garlic, and balanced by the sweetness of the potatoes and the slight bitterness of the kale.
  • Simple Ingredients: You won’t need any exotic ingredients for this soup. It uses common, readily available items that come together to create something extraordinary.

Recipe Ingredients

Creating this flavorful Instant Pot Zuppa Toscana requires a handful of simple yet potent ingredients. Below is a detailed look at each component, its role, and potential substitutions to suit your dietary needs or preferences. Refer to the full recipe card at the end of this post for precise measurements.

All the ingredients for Zuppa Toscana laid out before cooking, including sausage, bacon, onion, garlic, sweet potatoes, kale, broth, and coconut milk.
Ingredient What It’s For… Potential Swap
Italian Sausage This is the star protein of the soup, lending its distinctive herby and savory flavor. You can choose mild for a family-friendly meal or spicy for an extra kick, depending on your preference. For a lighter option, ground turkey works wonderfully. If you have a nightshade intolerance (learn more from my nightshade food list), you can easily make your own sausage at home using ground pork and a blend of dried herbs like parsley, basil, oregano, thyme, garlic powder, onion powder, and salt.
Bacon Bacon serves a dual purpose: it’s fried until crispy for a delicious garnish, and its rendered fat is used to sauté the onion and garlic, infusing the soup with an irresistible smoky depth. While highly recommended for flavor, if you prefer, you can cook the onion and garlic in a neutral oil like olive oil or avocado oil, and omit the bacon.
Onion & Garlic These aromatic foundational ingredients are essential for rounding out the soup’s complex flavors, adding sweetness and a pungent kick that elevates the entire dish. If fresh is unavailable, you can use dried versions (onion powder and garlic powder), typically 1 teaspoon of powder for every 1 tablespoon of fresh minced ingredient.
White Sweet Potato I prefer white sweet potatoes for their subtle sweetness and as an excellent nightshade-free alternative to regular potatoes. They absorb the flavors beautifully and create a tender, satisfying texture. Feel free to use white potato if tolerated, or even rutabaga for a low-carb option.
Kale Kale adds vibrant color, essential nutrients, and a pleasing texture that softens perfectly in the hot broth. It’s a key component for a truly authentic Zuppa Toscana experience. Spinach is a great alternative; simply add it at the very end as it wilts much faster than kale.
Chicken Broth This forms the rich, savory base of the soup, carrying all the other flavors. Ensure you use a good quality broth for the best taste. Vegetable broth can be used for a vegetarian option, though the overall flavor profile will change.
Coconut Milk Our dairy-free secret weapon! Full-fat canned coconut milk provides luxurious creaminess without any dairy, making this soup paleo and dairy-free friendly. If dairy is not an issue, you can use heavy cream. For another dairy-free swap, oat milk can be used, but ensure it’s a creamy, unsweetened variety.
Salt & Pepper Essential seasonings to enhance all the natural flavors. Adjust to your taste preferences.
Dried Oregano Adds an authentic Italian herbal note, complementing the sausage and broth beautifully.
Fresh Italian Parsley Used as a fresh garnish, it adds a bright, herbaceous finish and a pop of color to the soup.

How to Make Zuppa Toscana in the Instant Pot

Making this creamy Zuppa Toscana in your Instant Pot is incredibly straightforward. Follow these simple steps, accompanied by photos, to achieve a rich and hearty soup in no time. Full, detailed instructions are available in the recipe card below.

Bacon sizzling and crisping in the Instant Pot on sauté mode.

Step One: Crisp the Bacon. Set your Instant Pot to the sauté function (normal or medium heat). Add the chopped bacon and cook until it’s beautifully crispy. Once done, remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain, reserving the rendered bacon fat in the pot. This fat will provide an excellent flavor base for the rest of the soup.

Step Two: Sauté Aromatics. Keep the Instant Pot on sauté mode. Add the diced yellow onion and minced garlic to the leftover bacon fat. Cook for approximately 3-4 minutes, stirring occasionally, until the onions become translucent and fragrant. This step is crucial for building the flavor foundation of your soup.

Ground Italian sausage browning in the Instant Pot after the aromatics.

Step Three: Brown the Sausage. Add the ground Italian sausage to the pot, breaking it up with a spoon as it cooks. Sauté until the sausage is fully browned and cooked through, usually about 5-7 minutes. Once cooked, you may want to drain off any excess grease, though a little fat adds richness to the soup.

Chicken broth, coconut milk, diced sweet potatoes, salt, and pepper added to the Instant Pot with the cooked sausage and aromatics.

Step Four: Deglaze and Add Liquids. Turn off the sauté function. Pour in the chicken broth and use a wooden spoon to scrape up any browned bits stuck to the bottom of the pot; this is called deglazing and is important to prevent a “Burn” warning. Then, stir in the coconut milk, diced white sweet potato, dried oregano, salt, and black pepper. Mix thoroughly to ensure all ingredients are well combined.

The Instant Pot filled with all soup ingredients before the lid is locked for pressure cooking.

Step Five: Pressure Cook. Secure the lid onto your Instant Pot, making sure the sealing valve is set to the “Sealing” position. Select the “Manual” or “Pressure Cook” setting (High Pressure) and set the timer for 13 minutes. Once the cooking cycle is complete, carefully perform a quick release by turning the sealing valve to the “Venting” position. Stand clear of the steam.

Fresh kale added to the hot Zuppa Toscana in the Instant Pot, wilting into the soup.

Step Six: Add Kale and Serve. Once the pressure has fully released and the lid can be safely opened, remove it. Stir in the destemmed and chopped kale and fresh Italian parsley. Allow the kale to wilt into the hot soup for about 3-4 minutes until it’s tender-crisp. Ladle the hot Zuppa Toscana into bowls and serve immediately, topped generously with the reserved crispy bacon bits and extra fresh parsley for garnish.

How to Modify Instant Pot Zuppa Toscana for the Stove

While the Instant Pot offers unparalleled speed and convenience, you can absolutely make this delicious Zuppa Toscana on the stovetop if you don’t have a pressure cooker or simply prefer traditional methods. It will take a bit longer, but the rich flavors are well worth the wait. Here’s how to adapt the recipe:

  • Choose the Right Pot: For stovetop cooking, a large Dutch oven or a heavy-bottomed pot is ideal. These types of pots are excellent at conducting and retaining heat evenly, which is crucial for simmering the soup to perfection and preventing sticking.
  • Follow Initial Sauté Steps: Begin by following steps one through three of the Instant Pot instructions precisely. Sauté the bacon until crispy, remove it, then cook the onion and garlic in the bacon fat. Next, brown the Italian sausage, and drain any excess fat if necessary.
  • Deglaze and Simmer: After browning the sausage, turn off the heat briefly. Deglaze the pot by pouring in the chicken broth and scraping up any browned bits from the bottom with a wooden spoon. This step is essential for flavor and preventing anything from sticking. Then, add the coconut milk, diced sweet potato, oregano, salt, and pepper. Stir everything together.
  • Extended Simmer Time: Bring the soup to a gentle boil, then reduce the heat to low, cover, and let it simmer. The key difference here is the cooking time for the potatoes. Instead of 13 minutes under pressure, you’ll need to simmer for approximately 20-30 minutes, or until the white sweet potatoes are fork-tender. Check periodically to ensure the liquid isn’t reducing too much, and add a little more broth if needed.
  • Add Kale and Serve: Once the potatoes are tender, stir in the chopped kale and fresh parsley. Continue to simmer for another 3-5 minutes, or until the kale has wilted to your desired tenderness. Serve the soup hot, garnished with the crispy bacon and additional fresh parsley.

Tips & Tricks for Perfect Zuppa Toscana

Elevate your Zuppa Toscana with these expert tips and tricks, ensuring every batch is as delicious and satisfying as possible:

  • Customize Your Sausage: The type of Italian sausage you use significantly impacts the soup’s flavor profile. For a vibrant and spicy kick, opt for hot Italian sausage. If you prefer a milder taste or are serving children, a mild Italian sausage is perfect. For those who enjoy tailoring their spices, you can use plain ground pork or turkey and mix in your own blend of Italian herbs and spices, adding red pepper flakes for heat if desired. This allows for total control over the seasoning and spiciness.
  • Don’t Skimp on Toppings: Toppings are not just for aesthetics; they add crucial layers of flavor and texture. Beyond the essential crispy bacon and fresh parsley, consider adding a sprinkle of freshly grated Parmesan or Pecorino Romano cheese for a salty, umami boost. A drizzle of high-quality olive oil just before serving can also add a delightful peppery note and richness.
  • Achieve the Perfect Creaminess: For the creamiest texture, ensure you use full-fat canned coconut milk. Shake the can well before opening to combine the cream and liquid. If you find the soup isn’t as thick as you’d like, you can mash a few of the cooked sweet potato chunks against the side of the pot to release some starch and naturally thicken the broth.
  • Prevent the “Burn” Notice in Instant Pot: When using the Instant Pot, always deglaze the pot thoroughly after browning the sausage. Scrape up any browned bits from the bottom using a wooden spoon before adding liquids. This prevents food from sticking and triggering the “Burn” error.
  • Adjust Salt to Taste: Broths and sausages vary greatly in sodium content. Always taste your soup before adding the full amount of salt specified in the recipe. Adjust as needed at the end to ensure it’s perfectly seasoned to your palate.
  • Freshness of Kale: Use fresh, vibrant kale for the best texture and nutrient content. Remove tough stems before chopping, and if your kale is particularly fibrous, a quick massage with a little olive oil can help tenderize it before adding to the soup.

Recipe FAQs

Is Zuppa Toscana gluten-free?

Yes, this Instant Pot Zuppa Toscana recipe is entirely gluten-free! It uses white sweet potatoes as the primary starch instead of traditional pasta, and no flour or gluten-containing thickeners are used in the broth, making it suitable for those with gluten sensitivities or celiac disease.

What does Zuppa Toscana taste like?

Zuppa Toscana offers a rich and creamy flavor profile. You’ll taste the savory, often slightly spicy notes of Italian sausage, balanced by the smoky undertones of bacon. The tender sweet potatoes add a subtle sweetness and heartiness, while the kale introduces a refreshing, earthy bitterness that cuts through the richness. All these elements are enveloped in a velvety, herbaceous broth, creating a deeply satisfying and comforting experience.

Is Zuppa Toscana dairy-free and Paleo?

Traditionally, Zuppa Toscana is made with heavy cream. However, this specific version is crafted to be both dairy-free and Paleo-friendly by utilizing full-fat canned coconut milk as a creamy substitute. This swap provides the desired richness and texture without any dairy products, making it accessible for various dietary needs.

Can I use regular potatoes instead of sweet potatoes?

Absolutely! If you don’t have a nightshade intolerance, Yukon Gold or Russet potatoes can be used in place of white sweet potatoes. They will provide a more traditional potato flavor and texture. Just ensure they are peeled and diced to a similar size for even cooking.

What kind of kale should I use?

Curly kale or Lacinato (Dinosaur) kale both work well in this recipe. Ensure you remove the tough central stems and chop the leaves into bite-sized pieces. If using a very sturdy kale, you might want to add it a minute or two earlier to ensure it wilts properly.

Storage & Reheating Instructions

One of the best things about Zuppa Toscana is how well it holds up as leftovers, often tasting even better the next day as the flavors meld. Here’s how to properly store and reheat your delicious soup:

  • Refrigeration: Allow the soup to cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 3-4 days. The kale might soften a bit more over time, but the overall texture and flavor will remain excellent.
  • Reheating on the Stovetop: For best results, reheat the soup on the stovetop. Pour the desired amount into a saucepan and warm it over medium heat for 4-5 minutes, stirring occasionally, until it is heated through. If the soup has thickened too much in the fridge, you can add a splash of chicken broth or water to achieve your preferred consistency.
  • Reheating in the Microwave: Individual portions can be reheated in the microwave. Place the soup in a microwave-safe bowl and heat on high for 1-2 minutes, stirring halfway through, until hot. Be careful not to overheat, as this can sometimes affect the texture of the coconut milk.

Can Zuppa Toscana Be Frozen?

Yes, Zuppa Toscana is an excellent candidate for freezing, making it perfect for meal prep or saving for a quick future meal. The kale holds up surprisingly well, and the potatoes maintain their texture without becoming mushy. Here’s how to freeze and enjoy your soup later:

  • Freezing Instructions: Allow the soup to cool completely after cooking. Transfer the soup (without the crispy bacon topping) to freezer-safe containers or heavy-duty freezer bags. If using bags, lay them flat for easier storage once sealed. You can freeze the soup for up to 2-3 months.
  • Thawing and Reheating: When ready to enjoy, transfer the frozen soup from the freezer to the refrigerator and allow it to defrost overnight. Once thawed, reheat the soup in a pot on the stovetop over medium heat until it’s simmering and thoroughly warmed. Adjust consistency with a little extra broth or water if needed. Serve piping hot, topped with freshly cooked crispy bacon and a sprinkle of fresh parsley for the best experience.
