  • 1 ½ yellow onions, halved and sliced thin
  • 1 shallot, sliced thin
  • 3 cloves garlic, minced
  • 2 ½ cups beef broth
  • 2 bay leaves

For the sandwiches

  • 6 buns, (gluten-free recommended)
  • 6 slices provolone cheese, optional (omit for dairy-free or use DF cheese)
  • 6 tbsp mayo
  • 4 tbsp whole grain mustard
  • 1 cup arugula
