- 1 tbsp gelatin and 1/4 cup of water for the gelatin egg
- Berries to top the brownies
FOR THE FROSTING (Optional)
- 2 tbsp coconut oil, softened but not melted
- 1 tbsp carob powder
- ½ tsp honey
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the coconut flour, tapioca starch, carob powder, and baking soda. Whisk until well combined.
- Add the pumpkin puree, honey, and softened coconut oil to the dry ingredients. Stir thoroughly until a thick, uniform batter forms.
- To prepare the gelatin egg: Sprinkle 1 tablespoon of gelatin over ¼ cup of water in a small saucepan or microwave-safe bowl. Allow it to bloom for 1-2 minutes until it thickens.
- Gently heat the gelatin mixture over low heat (or microwave for a few seconds) until the gelatin completely dissolves. Do not boil.
- Once dissolved, remove from heat and whisk vigorously for 1-2 minutes until the mixture becomes frothy, resembling an egg white. This is your gelatin egg.
