Essential Ingredients for Your Paleo Kit Kat Masterpiece

Crafting these delectable bars requires a thoughtful selection of ingredients, ensuring both flavor and adherence to gluten-free, dairy-free, and paleo guidelines. Each component plays a crucial role in achieving that perfect Kit Kat experience.

For the Crispy Wafer Layers:

  • Egg: Acts as a binder, giving the wafers structure and a delicate crumb. For an egg-free or vegan option, a simple flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, allowed to sit for 5 minutes) works beautifully as a substitute.
  • Coconut Oil: Provides moisture and helps create that signature crisp texture in the wafers. Ensure it’s melted for easy incorporation into the dough.
  • Coconut Sugar: A natural sweetener that lends a subtle caramel-like flavor without the refined sugars found in traditional candies.
  • Vanilla Extract: Enhances the overall sweetness and adds a warm, inviting aroma to the wafers.
  • Almond Flour: This forms the primary grain-free base for our wafer cookies, contributing to their light and tender texture. It’s crucial for achieving a delicate crispness.
  • Arrowroot Starch: A fantastic thickening agent that helps achieve the desired crispness in the wafers, similar to cornstarch but paleo-friendly.
  • Baking Soda: A leavening agent that ensures the wafers have a slight airy quality, preventing them from being too dense.

For the Indulgent Chocolate Coating:

  • Dairy-Free Chocolate Chips: The star of the show! Choose a high-quality brand that melts smoothly for the best coating. Options range from semi-sweet to dark, allowing you to tailor the sweetness to your liking. Brands like Enjoy Life or Hu Kitchen are excellent choices for dairy-free and paleo-friendly options.
  • Coconut Oil: A small amount of coconut oil is added to the chocolate to help it melt smoothly, become more pliable for dipping, and create that perfect shiny, snap-able coating once set.

Gathering these simple yet powerful ingredients is the first step towards creating a batch of homemade Kit Kat bars that are not only guilt-free but also packed with incredible flavor.

Step-by-Step Guide: How to Craft Your Own Copycat Kit Kat Bars

Transforming these ingredients into delightful Kit Kat bars is a straightforward process. Follow these detailed steps to achieve perfect results every time.

Part 1: Preparing and Baking the Wafer Cookies

  1. Preheat Your Oven: Start by preheating your oven to 325°F (160°C). Prepare a baking sheet by lining it with parchment paper for easy removal.
  2. Create the Wafer Dough Base: In a medium mixing bowl, whisk together the egg (or flax egg), melted coconut oil, coconut sugar, and vanilla extract until well combined and smooth.
  3. Fold in Dry Ingredients: Gradually add the almond flour, arrowroot starch, and baking soda to the wet ingredients. Mix until a cohesive dough forms. It should be soft and manageable.
  4. Roll Out the Dough: Transfer the dough onto the prepared parchment paper. Place another sheet of parchment paper on top and use a rolling pin to roll the dough into a thin, large rectangle, approximately 1/4 inch thick. Aim for an even thickness across the entire sheet to ensure uniform baking.
  5. Score the Wafers: Carefully remove the top layer of parchment paper. Using a sharp paring knife or a pizza cutter, gently score the dough in half horizontally. Then, slice thin vertical strips to create individual wafer pieces, resembling the classic Kit Kat finger shape. Do not separate them yet; scoring helps create clean breaks after baking.
  6. Bake to Golden Perfection: Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the wafers are lightly golden brown around the edges and firm to the touch.
  7. Cool and Separate: Once baked, remove the wafers from the oven and allow them to cool completely on the baking sheet. This is crucial as they will crisp up as they cool. Once fully cooled, carefully break the scored wafers into individual pieces.

Part 2: Layering and Coating with Rich Chocolate

  1. Melt the Chocolate: While the wafers cool, prepare your chocolate coating. Combine the dairy-free chocolate chips and coconut oil in a heatproof bowl. Melt the chocolate using a double boiler method for best results, or carefully in the microwave in 30-second intervals, stirring until completely smooth and liquid.
  2. Assemble the Layers: Take one cooled wafer piece and spread a thin layer of the melted chocolate on top. Gently place another wafer piece on top, creating a sandwich. Repeat this process for all your wafer pieces, ensuring you have layered cookies.
  3. Chill to Set Layers: Transfer the layered wafer sandwiches to a parchment-lined baking sheet. Place them in the freezer for about 10-15 minutes. This brief chill time helps the chocolate filling set, making the subsequent dipping process much easier and cleaner.
  4. Dip for Full Coverage: Once the layered cookies are firm, remove them from the freezer. Working with one layered cookie at a time, carefully dip it into the remaining melted chocolate, ensuring it’s fully coated. Use a fork or a dipping tool to lift the bar, allowing any excess chocolate to drip off.
  5. Final Set and Garnish: Place the coated cookie back onto the parchment paper. Repeat with the remaining bars. If desired, drizzle any leftover melted chocolate over the tops for a decorative finish, and sprinkle with a pinch of sea salt for an elevated flavor profile.
  6. Chill Until Firm: Return the chocolate-coated bars to the refrigerator until the chocolate is completely set and firm, usually about 30-60 minutes.
  7. Enjoy Your Creation: Once fully set, your homemade Gluten-Free Kit Kat Bars are ready to be devoured! Serve chilled for the best experience.

Expert Tips & Tricks for the Perfect Gluten-Free Kit Kat Bars

Achieving bakery-quality results at home is easier than you think with these helpful tips:

  • Embrace Imperfection: Remember, homemade treats have character! Don’t worry if your wafer cookies aren’t perfectly even or uniform in shape. The chocolate coating is wonderfully forgiving and will beautifully mask any slight irregularities, ensuring your bars look professionally made.
  • Choose the Right Dipping Bowl: For efficient and mess-free chocolate dipping, use a large, shallow bowl. This allows for full immersion of the bars without needing excessive amounts of chocolate, making the process much smoother.
  • Parchment Paper is Your Best Friend: Always line your baking sheets with parchment paper, especially when rolling out the dough and setting the chocolate. It prevents sticking and makes cleanup a breeze.
  • Melting Chocolate Matters: When melting your chocolate, opt for a double boiler method to prevent scorching and ensure a silky-smooth consistency. If using a microwave, heat in short bursts (15-30 seconds) and stir frequently to avoid burning.
  • Chill Time is Essential: Don’t skip the chilling steps! Allowing the layered wafers to firm up in the freezer before the final dip, and then the final bars to set in the fridge, ensures a clean, stable, and perfectly snap-able chocolate coating.
  • Customize Your Coating: Feel free to experiment with different types of dairy-free chocolate – dark for a more intense flavor, or “milk” chocolate alternatives for a sweeter profile. A sprinkle of flaky sea salt immediately after dipping can elevate the flavor significantly.

Frequently Asked Questions & Customizations

Can You Make This Recipe Nut-Free?

While this specific wafer recipe relies on almond flour for its texture, it is possible to create a nut-free version. You would need to use a commercially available nut-free wafer cookie or find a separate recipe for a grain-free, nut-free wafer (e.g., using a combination of tigernut flour and arrowroot starch) and then apply the same chocolate layering and coating method.

Storage and Shelf Life

These homemade Kit Kat bars are best stored in an airtight container in the refrigerator for up to 3-4 days. For longer enjoyment, they can be frozen for up to a month. Thaw them slightly at room temperature before serving, or enjoy them straight from the freezer for a different texture!

Ingredients

For the wafer

  • 1 egg, sub flax egg, see notes
  • 3 tbsp coconut oil, melted
  • 3 tbsp coconut sugar
  • ½ tsp vanilla extract
  • 1 cup almond flour
  • 2 tbsp arrowroot starch
  • ¼ tsp baking soda

For the chocolate

  • 1 cup dairy-free chocoalte chips, I use this brand
  • 2 tsp coconut oil

Instructions

  1. Preheat the oven to 325 F.
  2. To prep the wafer dough, combine the egg, coconut oil, coconut sugar, and vanilla extract. Whisk well. Fold in the almond flour, arrowroot, and baking soda. Stir until a dough forms.
  3. Add the dough to a greased sheet of parchment paper and roll it into a thin, large rectangle about 1/4″ thick. Using a sharp paring knife, score the dough in half horizontally, and then slice thin vertical strips.
  4. Transfer to the oven and bake for 12 minutes or until lightly golden brown. Remove from the oven and allow to cool before carefully breaking up the wafers into individual pieces.
  5. Using a method of your choice (I prefer a double boiler method) melt the chocolate and coconut oil together until fully liquid.
  6. Working with one wafer at a time, add a thin layer of chocolate to the top and sandwich another wafer on top. Transfer to a parchment-lined baking sheet. Repeat for all of the wafers. Transfer to the freezer for about 10-15 minutes or until set.
  7. Remove from the freezer. Working with one layered cookie at a time, carefully dip each one into the melted chocolate, using a fork to allow the excess chocolate to run off. Set the coated cookie back onto the parchment paper and repeat. Use any leftover chocolate to drizzle over the top of the cookie. Top with salt if desired.
  8. Return to the fridge until the chocolate is set. Serve chilled, and store in the fridge for 3-4 days or in the freezer for a month.
